VITAMIN D: THE ALCHEMY OF RESILIENCE

Vitamin D is a vital nutrient that plays a complex role in maintaining our overall well-being. At its core, vitamin D regulates the absorption of calcium and phosphorus, which are essential for building and maintaining strong bones and teeth. Without it, bones can become thin and brittle. Beyond skeletal health, Vit. D modulates cell growth, neuromuscular function, and glucose metabolism, and bolsters our immune system.
Living in the northern latitudes the entirety of my life, I don’t need emerging evidence to know how sunshine improves one’s mood. But did you know Vit. D can also aid in weight management, and lower the risk of chronic diseases?
Vit. D also supports muscle strength which is important if you grew up having to cross the living room to change the television channel, or if the Dewey Decimal System was your first search engine. Vit. D acts like a high-speed data cable between your brain and your legs, improving your balance and sharpening your reaction time. Carnivores like cats and dogs are functionally incapable of solar synthesis and rely strictly on dietary intake, traditionally from the fat and livers of prey. Vitamin D is one of the few nutrients our bodies can produce on its own, primarily through skin exposure to sunlight. Unfortunately, our modern lifestyles, have us spending more time indoors, using sunscreen, or we live in northern regions with limited sun, which leads to some insufficient levels. Research shows that adequate vitamin D levels can help reduce the risk of diseases like osteoporosis, certain cancers, cardiovascular issues, and even respiratory infections.
Many people with low vitamin D levels don’t notice symptoms right away. Common signs include persistent fatigue that doesn’t improve with rest, bone pain or achiness, and muscle weakness or cramps. Mood changes (sadness or depression), are common. Other indicators might involve hair loss, frequent illnesses due to a weakened immune system, joint pain, or even weight gain. In severe cases, especially in children, it can cause developmental delays, bowed legs, or rickets.
A unique and effective way to up your Vit. D intake involves fungi. Mushrooms contain ergosterol, a compound that converts to vitamin D2 when exposed to ultraviolet light. Simply place raw mushrooms in direct sunlight for 15-30 minutes—gills up for maximum effect—to significantly boost their vitamin D content.

This trick works even in winter or with UV lamps, and the Vitamin D remains stable in the fridge for up to eight days.
